Before he returned to Down Under to start his Japanese fusion business, he worked in Michelin-starred restaurants in Canada and the United Kingdom. On Monday 13 June 2022, Ume’s passing was announced on social media. “With a heavy heart, deep sorrow, we announce the sudden and unfortunate passing of our founder, Kerby Craig, our dearest brother and son, friend and mentor. He was a passionate chef who wanted to live his passions. He worked tirelessly to make Ume what is today, bringing joy and fun to people through delicious food and great food. After dropping out of school, the late chef began his hospitality career at 15 years old. He started at the famed restaurant of Japanese-Australians in Rozelle with chef Tetsuya Wakuda. He spent time in London learning his culinary art. When he returned to Sydney, he was a chef de parties at Koi. It was located in Woolwich. He opened Ume, his fine-dining Japanese restaurant in Surry Hills in 2012. Although he is no longer with us, his food will always be with us.
